As Valentine’s Day approaches, you may be wondering how to incorporate the festive color of red into your meals, and how to healthfully please both your children and your palate.  Beets are your answer!  Beets, known for their signature deep red color, are in the root vegetable family and are very rich in antioxidants and nutrients, specifically potassium, vitamin C, fiber, magnesium, iron and folate.  With benefits of lowering blood pressure, aiding in immunity, decreasing the risk of cancer, lowering inflammation, and helping with pregnancy (folate prevents birth defects), beets are extremely versatile for consumption. Popular ways to prepare beets include roasting, steaming and juicing.
